Pesto Sauce All Around!
I love the flavor and scent of pesto. It gives food a bold flavor making each meal very satisfying. I really didn’t follow a particular recipe since I made it up as I went along since I read what pesto consisted of.
Pesto
4 cloves garlic
6 tbsp pine nuts
2 cups Fresh Basil
2/3 cup Parmesan Cheese freshly grated
2/3 cup Pecorino Romano Cheese freshly grated
6-7 tbsp Extra Virgin Olive Oil
1 tsp salt and pepper
Put the garlic and pine nuts in a food processor or blender until it is finely chopped.
Then add the basil, parmesan, pecorino romano,olive oil, and salt & pepper into the food processor. Blend for about 20 seconds, you will need to scrape down the sides and keep blending until the pesto mixture is formed into a paste.
You can store pesto in a container in the fridge, you can use it as a spread for sandwiches, or use it as a sauce for pasta.
