Roman Style Chicken with Angel Hair Pasta
We are not going to Rome tonight, but here’s a recipe that was inspired by Giada De Laurentiis. Roman cuisine in Italy is known for having rustic dishes that contain simple ingredients. This Roman style dish is not only light and hearty, but also filled with a lot of flavor. Very impressive since this dish has the basic Italian ingredients.
Roman Style Chicken with Angel Hair Pasta
- 1/4 cup extra-virgin olive oil
- 4 boneless, skinless chicken breast halves
- Salt and freshly ground black pepper
- 1 red pepper, sliced
- 1 yellow pepper or green if you cannot find yellow peppers, sliced
- 3 ounces (4 slices) prosciutto, finely chopped
- 2 cloves garlic, chopped
- 1 15-ounce can diced tomatoes with juices
- 1 tbsp dried thyme
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1 tsp dried basil
- 1/2 cup vegetable stock
- 1/2 pound angel hair pasta
- Parmesan Cheese as topping
Heat the olive oil in a large pan over medium-high heat. Sprinkle the chicken with salt and pepper.
Cook the chicken until brown on both sides. Remove from the pan and set aside.
Keeping the same pan over medium heat, add the peppers and prosciutto then cook until the peppers have softened and the prosciutto is crisp. This should take about 10 minutes.
Add theĀ garlic, diced tomatoes with juices, vegetable stock, and herbs. Using a wooden spoon, scrape the brown bits off the bottom of the pan.
Return the chicken to the pan, add the stock, and then bring the mixture to a boil.
Reduce the heat and simmer, covered, until the chicken is cooked through, about 20 to 30 minutes. Remove the chicken and let cool slightly on a cutting board. Using a fork and knife, shred the chicken.
Return the chicken to the pan.
Bring a large pot of salted water to a boil over high heat. Add the fresh pasta, stir, and cook until according to the directions on the package. Angel hair pasta usually takes 10-12 minutes to cook, depending on how much you are making.
Drain the pasta and spoon the pasta into serving dishes and top with the chicken and sauce
