Frank’s French Onion Steak
As you all know by now, Hurley works as a bartender at a restaurant. He has regulars that come in on a weekly basis. One of his favorite regulars, Frank, is a foodie like us. He came into the restaurant one day and shared a recipe with Hurley. He mentioned that it was the most amazing steak that he created. He strongly suggested that I should make it, and so today I share with you Frank’s French Onion Steak. The preparation for this dish is quite simple, especially since you use a crock pot to do the cooking for you. One ingredient that makes this steak stand out, is the french onion soup mix which is used as a rub on the steak. Who knew that soup mix would take a steak and turn it into a mouth watering meal! This is a steak that requires you to marinate it in the fridge for roughly two to three days. The reason for this is to let all of the flavors steepen into the meat, I promise you it is worth the wait. Thanks Frank!
Frank’s French Onion Steak
- 1lb Top Round/ London Broil Steak
- 1 packet French Onion soup mix
- 4-5 fresh garlic cloves
- 1 tbsp rosemary
- 1 tbsp oregano
- 1 tbsp basil
- 1 tbsp parsley
- 1 tbsp sage
- 1 tsp ground pepper
- 2- 1/2 cups vegetable stock
- 1 medium onion sliced
In a small bowl, prepare the dry rub by adding the french onion soup packet, rosemary, oregano, basil, parsley, sage, and ground pepper. Mix until all of the seasonings are combined and set aside.
Take the steak and slit little pockets about an inch deep, depending on how big your steak is you should have about 4-5 little pockets.
Go ahead and apply the dry french onion rub onto the steaks make sure both sides are well coated with the rub.
make sure both sides are well coated with the rub.
Insert the garlic cloves into the little pockets make sure they are not loose and that they hold in the pocket well.
Put the steak in a container and let it sit in the fridge for 2-3 days. During this time the steak has a chance to absorb the flavors of the rub and garlic.
and three days later….
Add the onions and vegetable stock into the crock pot.
The vegetable stock should be covering the steak half way, but not completely covering the steak :
Set the crock pot on high for three hours
once the steak is ready serve with the onions on top.
One medium sized london broil steak makes about two servings. This steak makes a great paring with scalloped potatoes, but that’s another post!
