Chicken Stuffed with Mozzarella, Basil and Sundried Tomatoes
Who knew watching a television show can inspire you? I was watching Dinner Impossible at my parents house while visiting and one of Robert Irvine’s menu items was stuffed chicken with broccoli rabe, smoked mozzarella, and roasted tomatoes. I did not remember the stuffed chicken until a couple of days later while trying to decide what to make for dinner. I did my own variation of his recipe by using basil and sundried tomatoes that I already had on hand. This was a super easy dish to make. The flavors of basil and sundried tomatoes with oozy mozzarella is what made this meal very satisfying. Dinner very possible.
Chicken Stuffed with Mozzarella, Basil and Sundried Tomatoes
- 1/2 cup sundried tomatoes finely chopped
- 2 cups fresh basil finely chopped
- 1 tsp Emeril original essence seasoning
- 1 tbsp onion powder
- freshly ground black pepper
- 2 tablespoons extra virgin olive oil, for drizzling over the chickens
- 1 cup vegetable stock
- 3-4 thinly sliced boneless chicken breasts
- 1/2 cup mozzarella cheese, chopped or sliced
Pre-heat oven to 350 degrees.
Put the basil and sundried tomatoes in a food processor or blender until it is finely chopped. Set aside.
Place the chicken breasts onto a plate and spoon the basil sundried tomato mixture and spread all over the chicken. Season with Emeril Essence, onion powder, and pepper. Then place chopped mozzarella on each chicken breast.
Fold in each end and roll tightly. Securing with toothpicks as needed
and season again with Emeril Essence and pepper. Liberally drizzle two tablespoons of extra virgin olive oil over the stuffed chicken. Pour some vegetable stock onto the bottom of the baking dish. Place the chickens into the baking dish.
Roast at 350 degrees until fork tender which should take about 35 minutes.
