Santa Fe Chicken Wrap
Sometimes there is a bunch of random stuff in the fridge leaving you with endless possibilities. We still had a lot of Zesty Corn Salsa left over and some grilled chicken from the quesadillas we had the other night. What do you do with tortillas, chicken, and some yummy condiments? Turn it into a delish healthy wrap! This is where this yummy creation comes into play. It’s quick, easy ,and best of all a party for your taste buds.

Santa Fe Chicken Wrap
- 2 (6-inch) tortillas
- 1 cup grilled chicken breasts or any perferred luncheon meat, sliced about 1/2 inch thick (about 2 small breasts)
- 1/2 cup zesty corn salsa
- 1 cup chopped lettuce
- 1/4 cup shredded monterry jack cheese
Warm tortillas in the oven for about five minutes at 300 degrees.
In the middle of each tortilla, place a couple of layers of chopped lettuce.
Spoon two tablespoons of shredded monterry jack cheese and zesty corn salsa on top
place about two tablespoons of grilled chicken

Here’s the tricky part. Since I was the one making the wraps and snapping photos, I was unable to take photos of how to close up the wrap. Here’s the yummy goodiness anyway!

well it’s not an “everything leftover in the fridge” kind of things, but one of my all-time favourite sandwiches is..toasted cheese with roasted red peppers. Yummmmm

Looks delicious! I love the combination of the corn salsa and the chicken! I am on a lettuce wrap kick lately, so I would probably skip the tortilla and just wrap the chicken and salsa in the lettuce!
Always a great idea – wraps of every kind. My biggest dilemma though is always the ‘tortilla’ . . . I still haven’t found what kind makes the best wrap. Every grocer I frequent has at least 1/2 dozen brands and flavors. Some I buy are too doughy and some too dry – any commentary on any secret to ‘wraps’?!
I always buy the whole wheat wraps made by Thomas. They are great wraps and they taste great!
