Baked Fontina Pasta with Grilled Turkey Sausage
The pantry is filled with an outrageous amount of pasta due to a sale our local supermarket had recently. Whenever there is a great sale on pasta, I go kind of crazy and stock up. It’s pretty funny. Scrambling in the pasta aisle trying to beat anyone who dares to take our favorite shapes of pasta. When I got home, after running around like a headless chicken, I said to myself, “Well that sure is a lot of pasta we’ve got there, D’oh!”. End result was Baked Fontina Pasta with Grilled Turkey Sausage. The dish slowly came together as I started pulling out ingredients such as Fontina cheese, turkey sausage, and frozen veggies from the fridge. Fontina cheese is like Havarti cheese meaning that it is semi-soft, mild, buttery, and somewhat nutty. It melts very well, which makes an excellent component in cheese sauces. The creamy Fontina cheese sauce in this dish is not heavy like most cream sauces are. I was extremely pleased the finished product was flavorsome and light. The next time you are stumped on what to make for dinner, go have a looksie in your pantry and fridge, you’ll be surprised by what you will come up with!
Baked Fontina Pasta with Grilled Turkey Sausage
- 1lb (16 ounce) Shady Brooks Hot Turkey Sausage
- 1 /2 cup onion, diced
- 1/2 cup Italian green peppers, diced
- 1/2 red bell pepper, diced
- 1 tablespoon garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter
- 1 teaspoon dried thyme
- 1/2 tablespoon dried basil
- 1/2 teaspoon fresh ground pepper
- 1 cup chicken stock
- 1 teaspoon cornstarch dissolved in 1 tablespoon water
- 1 cup low fat evaporated milk
- 8 ounces uncooked pasta of your choice
- 1 cup shredded Fontina cheese, shredded & divided
Preheat oven to 375 degrees
Cook pasta according t0 the directions on the package, drain and set aside
In a grilling pan, grill the turkey sauages until all sides have nice char markings
Then cut sausage into 1/4-inch slices and set aside.
Heat a large skillet over medium-high heat, melt butter, and lightly sauté the onions, peppers, and garlic then season with basil and thyme. Cook for 10 minutes.
Add pepper, evaporated milk, chicken stock, and corn starch then bring to boil.
Add the sausage along with 1/2 cup of Fontina cheese into the pan
Stir to combine creating a creamy sauce. Reduce heat and simmer for 15 minutes.
Pour the sausage and pepper mixture into a 13×9-inch glass baking dish and stir in the pasta
Sprinkle with the remaining Fontina cheese
Cover baking dish tightly with foil. Bake for 45 minutes, remove the foil and season with some basil

Wow this looks good. I too have a lot of pasta in my pantry. Gluten-free pasta is expensive, so not long ago I was at a grocery outlet and there it was, for about $1.50 a pound. So I snagged like 8 bags. And now I have a bunch of pasta – maybe I should take a cue from you and throw together a dish like this!
