Pulled Pork Enchiladas
When you have a lot of pulled pork left over, it makes you think, “What the heck do you do with all of that delicious meat?!” I thought of a few options such as tacos or pizza, but then a little voice inside said, “Enchiladas!” You cannot go wrong with enchiladas especially when the pulled pork is already loaded with fiery spices Just add a couple of sauteed veggies and then top with some salsa and cheese. You have a meal ready to go! Since the meat portion of this dish is taken care of, it is very easy to prepare the enchiladas which saves you a lot of stress after a long day.
Pulled Pork Enchiladas
- 2 cups pulled pork
- 1 small red onion, diced
- 1/2 cup green bell peppers, diced
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon pepper
- 1/2 teaspoon chili powder
- 1 teaspoon onion powder
- 10 corn tortillas
- 1 cup shredded Monterry jack cheese as a topping
- 1/2 cup fire roasted tomato salsa or your favorite salsa
Preheat oven to 350 degrees
In a large skillet, pour a tablespoon of olive oil and saute the onions, peppers, and garlic until they soften
Then stir in the pulled pork into the sauteed veggies. Season with paprika, onion powder, chili powder, and pepper. Cook for 10 minutes more
In a separate nonstick pan, heat up the corn tortillas over low heat and scoop in about two spoonfuls of the pulled pork mixture. Be careful not to over pack them
Roll tortilla tightly and place into a baking dish seam side down. Repeat the process until all of the tortillas and pulled pork mixture has been utilized
Pour the fire roasted tomato salsa across the enchiladas and sprinkle with lots of Monterrey jack cheese. The more cheese you use the better!
Bake until the cheese is melted or 15 minutes. Top with some sour cream and green onions. You can also serve some delicious Spanish rice along side with these yummy enchiladas. Enjoy!
