Pumpkin Spice Cookies
Pumpkin galore! October is known as “all you can eat pumpkin month”. I’m not knocking on pumpkin because here at Simply Scrumptious we love pumpkin! If you recall, last year I baked an awesome favorite Caramel Crumb Pumpkin Pie. Whenever October and November rolls around, my family and friends always ask, “So are you going to bake that delicious crumb topping pie again?” It never ends I tell you! To celebrate pumpkin month, I was in the mood to bake some cookies. I keep seeing pumpkin spice cookies pop up every where to the point where cravings ensued and eventually got bit by the pumpkin bug. These cookies are very soft and cake-like. They are not your average chewy cookies. I would like to think of them as cakies, a cross of cookies and cakes. After I had finished baking the cookies, I realized I had a good cup of pumpkin puree left to use up. Anyone want to take a guess what I did with it? I’ll leave that up to your imagination . It is a surprise I am saving for another entry
Pumpkin Spice Cookies
- 1 cup canned pumpkin
- 1 cup Splenda baking sugar
- 1/2 cup corn oil
- 1 egg
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 teaspoon baking soda dissolved in 1 teaspoon milk
- 1 tablespoon vanilla extract
In a large bowl add the flour, sugar, baking powder, and salt
Then add the cinnamon, ginger, and cloves then set aside
Dissolve the baking soda in the milk and give it a quick stir
In a separate bowl add the pumpkin, corn oil, vanilla, baking soda-milk mixture, and egg
Using a hand mixer, beat the wet ingredients until the pumpkin mixture has formed a thick consistency and it has a bright orange-y color
Add the pumpkin mixture to the flour mixture and beat until the all of the flour has been combined.
The dough should be thick and somewhat sticky
Drop by spoonful onto a non-stick cookie sheet. They do not have to be a perfect circular shape
Bake at 350 degrees F for 10-12 minutes or until lightly brown and firm.
