Potato Latkes
I want to apologize for my brief absence due to having a rotten nasty cold! My lack of taste buds while being sick prevented me from doing any serious cooking in the kitchen the last few days. I have missed you all, but now I am very excited to share with you today, Potato Latkes. After a couple of failed attempts at making these yummy pan fried latkes, I finally figured out where I went wrong and why they kept falling apart during the frying process. The first time around I tried taking left over mashed potatoes and making them into little pancakes, well let’s just say that was a no go. Silly ol’ me forgot to add flour and an egg hence the reason why they just fell into a puddle of mush in the oil. D’oh! After researching further into the realm of potato latkes, I was confident once again to tackle this mission. I was determined to finally succeed in making delicious crispy latkes. I was very pleasantly surprised by how easy they are to make. The only complicated step in making latkes is having to wring all of the liquid out of the potatoes. That’s okay because it was totally worth the hard work in that step. The finished product was very crisp and flavorsome! Hurley kept insisting he was eating hash browns the entire time, but I had to remind him they are really latkes.
Potato Latkes
- 2 cups Idaho russet potatoes, peeled and shredded (3 medium potatoes)
- 1/2 cup onion, finely chopped
- 2 eggs, beaten
- 3-4 tablespoons all-purpose flour
- 1 1/2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 cup corn oil
Shred the potatoes
Place the potatoes in a cheesecloth or clean kitchen towel
Wring the kitchen towel, extracting as much water out of the potatoes as possible
Place the shredded potatoes in a bowl and add the onions then season with onion powder, garlic powder, salt, and pepper
In a small bowl, combine the eggs and flour
Then stir in the egg flour mixture into the potatoes, make sure it is thoroughly combined
In a large non-stick skillet over medium-high heat, heat the corn oil until hot. Place large spoonfuls of the potato mixture into the hot oil, pressing down on them to form 1/4 to 1/2 inch thick patties
The latkes should be a crisp golden brown on one side, that’s when you know it’s time to flip them over
Let drain on paper towels. In the end the potato latkes will look perfectly crisp yet slightly tender on the inside!
Serve hot!

I made potato pancakes for the first time a month or so ago– totally worth the effort! Perfect weekend breakfast with bacon and a runny egg on top!

Congratulations on making perfect latkes. FYI, when you make them with cooked mashed potatoes they are actually chremslech.
Potato latkes are also great when combined with other shredded vegetables, I’ve done carrots, zucchini and sweet potatoes. Have fun experimenting!
I make mine Korean-style, without the egg and I haven’t had a problem with them falling apart.

You know, one of the first things I learned to cook when I was a young lad was potato pancakes and these Potato Latkes sure do remind me of those wonderful treats.

Every year on New Years Day we have a traditional German meal and it wouldn’t be complete without latkes!!

These sound great! I make a similar one with shredded zucchini. Using potatoes will be a great change. Never thought of using it. Thanks for the idea. I will make these for breakfast tomorrow.

I haven’t made your recipe yet, but will, sometime this week (being Chanukah). It sounds very good.
Suggestion: instead of using paper towels to wring out the moisture (waste of money and natural resources, blah, blah, blah) try using a clean dish towel. Something like a flour-sack dish towel you can get at Bed, Bath & Beyond. Using a dish towel, you’ll be able to REALLY wring out the liquid, using the same towel over and over again. When done, just put it in the regular laundry. Be aware though, the water from the potatoes will oxidize and permanently stain the cloth into a dirty gray.
