Snickerdoodles
The baking bug had bit me, and yet I had no idea what to make. I was thinking about making some sort of cinnamon-y cookies and that’s when I thought “Snickerdoodles!” I remembered a few months back while checking out my good friend Shelby’s blog over at Grumpy’s Honeybunch. She had this really fantastic cooking light snickerdoodle recipe. This cookie was calling my name and I just had to bake them right away! I made a couple of adaptations to this recipe by using Splenda sugar brand since I watch my sugar intake. These cookies came out slightly crisp round the edges and has a nice, sweet, and buttery cinnamon flavor baked to pure perfection. Don’t take my word for it, feast your eyes on these yummy photos.
Snickerdoodles: Cooking Light
- 3/4 cup Splenda baking sugar
- 2/3 cup Splenda brown sugar
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/3 cup Splenda baking sugar
- 1 1/2 teaspoons ground cinnamon
Preheat oven to 400°.
Combine 3/4 cup granulated sugar, brown sugar, and butter in a medium bowl
Beat with a mixer at medium speed until light and fluffy
Beat in vanilla and egg
The sugar mixture will be smooth and creamy
Combine flour, baking powder, 1/2 teaspoon cinnamon, and salt
Stir the dry ingredients well with a whisk
Add flour mixture to butter mixture
Beat until combined
This dough is extremely light and kind of sticks to your fingers a bit, but it’s not messy at all.
Combine 1/3 cup granulated sugar and 1 1/2 teaspoons cinnamon in a small shallow dish
Shape dough into balls and roll in the cinnamon sugar
Place about 1-2 inches apart on a non-stick baking sheets and flatten the cookies with a fork
Bake at 400° for 8 minutes. Cool on pans 1 minute. I know the cookies came out semi-attached to each other, but they come off the pan really nicely and separate quite easily too.
Shelby, these cookies were so good that they were gone within four days! No joke

A classic cookie. Perfect for the holidays. Have you ever had issues with baked goods not rising when you use Splenda?
I have no issues with splenda sugar with rising, I find it works perfectly!
