Steak Taquitos
I was talking to my dearest friend Dolly sometime last week and she was telling me about a dish she had made for dinner. Dolly is from Mexico and ever since we were kids she would always tell me about the dishes she grew up having. I’m always getting ideas from her when it comes to cooking Mexican dishes. One of the dishes she made recently was taquitos. She even shared some yummy photos with me online. After seeing them, I knew I just had to make them as soon as possible! Dolly made hers with corn tortillas, I opted to use flour tortillas since corn tortillas are a little tricky to work with. I kept the filling simple by adding steak, onions, peppers, and shredded cheese. Taquitos is not a hard dish to make, it is fairly easy, fast and most importantly delicious!
Steak Taquitos
- 1lb beef round pepper steak
- 1 tsp extra virgin olive oil
- 1 tbsp dried cilantro
- 1 tsp onion powder
- 1 tsp ground paprika
- 1/4 tsp chili powder
- 1/4 tsp cayenne pepper
- 1/4 tsp ground cumin
- 1/4 tsp black pepper
- 1 tsp fresh garlic, minced
- 1 medium red onion, chopped
- 2 green bell peppers, chopped
- 2-3 cups Kraft Shredded Mexican Cheese
- 1/2 cup corn oil, for frying
- 12 4-inch flour tortillas
In a medium bowl add the steak slices and season with chili powder, cayenne pepper, cilantro,cumin, paprika, onion powder, and pepper
Pour olive oil over the steaks and give them a quick toss to help evenly distribute the seasonings
Place the steak strips on the grilling pan and cook until nicely browned and no longer pink for about 8-10 minutes. These steaks should be monitored carefully because they tend to overcook really quickly. You do not want tough and dried out steaks.
Slice the steaks into bite size pieces, set aside
Meanwhile, in a large pan cook the onions, garlic, and green bell peppers until softened, about 10-15 minutes over medium low heat
Add the steak pieces into the onions and peppers mixture and stir to combine
Now let’s make some taquitos !
Making the Taquitos:
Warm a few tortillas at a time. The tortillas roll better when they are warm. Place two spoonfuls of steak mixture onto the tortilla
Then add about a two tablespoons of shredded cheese
Then roll tightly. Usually toothpicks are inserted to help the taquitos keep their shape while frying. I did not have any toothpicks on hand but it worked out pretty well out them.
Repeat the process until all of the tortillas and steak mixture has been used up
Cooking the Taquitos:
Heat the corn oil in a large skillet. Cook the tortillas, three at a time until one side is golden. They fry up in a matter of seconds. So keep a close eye on them!
Then flip them over to the other side, it should look like this when you’re about to remove them from the pan
Serve with a variety of toppings such as lettuce, tomatoes, guacamole, salsa or sour cream. Yum!
