Mexicali Napoleons
Over the past year or so I have seen Pepperidge Farm puff pastry sheets pop up in a few blogs and ever since then I have always wanted to use puff pastry sheets. And thus an intrigue began. I thought, “Why not make your own?” A fine goal, but I’m saving that for another day. For now we delve into the world of puff pastry via Pepperidge Farm to see what the hype was about. Pepperidge Farm has their own website dedicated to their puff pastry line. Listed there are a plethora of recipes with endless possibilities using puff pastry. One particular recipe caught my eye and taste buds, Mexicali Napoleons. You know about our deep passionate love for Mexican cuisine, well this one was not going to be passed up too easily! They looked so elegant, yet simple, and easy to make. The end result was light, flaky with a tantalizing spices that leaves your taste buds wanting more!
Mexicali Napoleons
- 1/2 package (17.3 ounce package) Pepperidge Farm Puff Pastry Sheets (1 sheet)
- 1 cup smoked chorizo sausage, chopped
- 1 can (16 oz) refried beans
- 1/2 cup shredded Mexican cheese blend
- 1/2 cup onions, chopped
Thaw the pastry sheet at room temperature for 40 minutes or until it’s easy to handle.
Pre-Heat oven to 400 degrees.
Unfold pastry on lightly floured surface and cut into strips along fold marks
Cut each strip into mini rectangles, place them on a baking sheet about 2 inches apart
Bake for 15 minutes or until they’re golden brown. While they are baking in the oven they are going to puff up and it going to look like a plain puff pastry.
Meanwhile in a large non-stick skillet saute the onions and chorizo sausage until the onions have softened, about 10 minutes
It should look like this after 10 minutes has passed
Remove the puff pastries from the oven and cool
Heat the beans in a 1-quart saucepan over medium heat
Split the pastries in half creating two separate layers, making 12 layers in all. Spread the beans on bottom layers
Top with the chorizo onion mixture
then sprinkle some cheese
Top with a layer, almost as if it is a mini sandwich
It is a very simple, easy and quick dish to make especially if you’re hosting a Superbowl party and you’re trying to focus on the game. Mexicali Napoleons are perfect for that!

These look wonderful! I too recently became a big fan of puff pastry. I did make my own once for the Daring Bakers challenge. It was a lot of work but totally worth it. With that said, I still don’t make it on my own that often. The Pepperidge farm version works perfect for me. I even used it to make beef and veggie samosas once. Delish!

Puff pastry dough is so fun to work with and the Pepperidge Farm brand is very easy to work with, and saves a lot of time from making your own puff dough.
These southwest Napoleons are great the hot Chorizo sausage makes them kicked up too!
