  • 1/3 cup white granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup full-fat sour cream (room temperature)
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a bowl, combine chopped apples with brown sugar, cinnamon, and ginger; set aside.
  3. In another bowl, whisk together egg, granulated sugar, vegetable oil, sour cream, and vanilla until smooth.
  4. In a separate bowl, mix flour, baking soda, and salt. Gradually add to wet ingredients until just combined.
  5. Gently fold in the apple mixture until evenly distributed.
  6. Pour batter into the prepared loaf pan and smooth out the top. Bake for 50–55 minutes or until a toothpick inserted comes out clean.
  7. Allow cooling in the pan for about 10 minutes before transferring to a wire rack.
  8. Drizzle with glaze made from powdered sugar, vanilla extract, and milk once cooled.
