- ¼ teaspoon ginger (pumpkin pie spice or allspice)
- ¾ cup powdered sugar (or more as needed for desired consistency)
- 1 tablespoon plus ½ teaspoon apple cider
- ¼ teaspoon vanilla

Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Reduce the apple cider in a small saucepan over medium heat until it thickens to about ½ cup; allow it to cool slightly.
- In a bowl, mix together melted butter, flour, brown sugar, granulated sugar, and cinnamon for the streusel; set aside.
- Whisk together dry ingredients (flour, salt, baking powder, baking soda, cinnamon, nutmeg) in a large bowl.
- In another bowl, cream room temperature butter with sugars until light and fluffy. Add egg and vanilla; mix well.
- Stir in Greek yogurt and cooled apple cider until combined.
- Gradually add dry ingredients to wet mixture; fold in chopped apples gently.
