  • 1 ¼ cups apple cider (reduced to ½ cup)
  • 1 ½ cups all-purpose flour
  • ½ cup brown sugar
  • 6 tablespoons unsalted butter (room temperature)
  • 1 egg
  • ¼ cup Greek yogurt or sour cream
  • 1 ¼ cups chopped apples (preferably Granny Smith)
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ginger (pumpkin pie spice or allspice)
  • ¾ cup powdered sugar (or more as needed for desired consistency)
  • 1 tablespoon plus ½ teaspoon apple cider
  • ¼ teaspoon vanilla
  • 1 pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Reduce the apple cider in a small saucepan over medium heat until it thickens to about ½ cup; allow it to cool slightly.
  3. In a bowl, mix together melted butter, flour, brown sugar, granulated sugar, and cinnamon for the streusel; set aside.
  4. Whisk together dry ingredients (flour, salt, baking powder, baking soda, cinnamon, nutmeg) in a large bowl.
  5. In another bowl, cream room temperature butter with sugars until light and fluffy. Add egg and vanilla; mix well.
  6. Stir in Greek yogurt and cooled apple cider until combined.
  7. Gradually add dry ingredients to wet mixture; fold in chopped apples gently.
  8. Pour the batter into the prepared pan and top with streusel mixture.
  9. Bake for about 35-40 minutes or until a toothpick inserted comes out clean.
  10. Allow cooling before glazing with a mixture of powdered sugar, apple cider, vanilla extract, and salt.
