  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 150 g granulated sugar
  • 4 egg yolks
  • 600 ml milk (whole or plant-based)
  • Gluten-free pastry sheets
  • Vanilla bean paste

Instructions

  1. Preheat the oven to 180°C (350°F). Peel and core the apples, slice thinly, toss with sugar and salt, then layer in a baking dish. Bake for 30-40 minutes until softened. Let cool.
  2. Roll out gluten-free pastry sheets on a lined baking tray, sprinkle with cornstarch, prick with a fork, and bake for 15-20 minutes until golden. Cool completely.
  3. For the custard, whisk egg yolks, cornstarch, sugar, and salt in a saucepan. Gradually add milk and cook on medium heat while stirring until thickened (8-10 minutes). Stir in vanilla paste and let cool.
  4. Assemble by layering pastry, custard, and baked apples until all components are used. Finish with a final layer of pastry.
