Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3 medium apples, peeled, cored, and diced
- ½ cup brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon milk (for glaze)
- ½ cup powdered sugar (for glaze)
Instructions
- In a bowl, whisk together flour, baking powder, and salt. In another large mixing bowl, cream the butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract. Gradually add the flour mixture until combined. Chill this dough in the refrigerator for 30 minutes.
- In a medium saucepan, combine diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Cook over medium heat until the apples are tender—about 5 to 7 minutes. Remove from heat and let it cool.
- Preheat your oven to 350°F (175°C). Roll out the chilled dough on a floured surface to about ¼ inch thickness. Cut into circles using your cookie cutter.
- Place half of these circles on a baking sheet lined with parchment paper. Spoon a small amount of apple filling onto each circle's center. Top with another dough circle and press edges to seal.
- Place in your preheated oven and bake for 15-18 minutes or until lightly golden. Once done, remove from oven and allow cooling on a wire rack.
- In a small bowl, whisk together powdered sugar and milk until smooth. Drizzle this glaze over cooled cookies.
- Once the glaze has set nicely on your cookies, serve them up! Enjoy these delicious Apple Pie Cookies that bring together all the flavors of fall in every bite!
