  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 8 ounces feta cheese, crumbled
  • ½ cup Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh dill, chopped (or parsley)
  • 2 cloves garlic, minced
  • Crackers or sliced baguette, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced butternut squash with olive oil, salt, pepper, smoked paprika, and garlic powder until evenly coated.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes or until tender and golden brown.
  4. While the squash is roasting, blend feta cheese, Greek yogurt, lemon juice, dill (or parsley), and minced garlic in a food processor until smooth.
  5. Once roasted, let the squash cool slightly before spreading feta dip on a serving platter and topping with the squash.
