  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas

Instructions

  2. Stir in the diced onion and bell pepper; sauté for about 5 minutes until softened.
  3. Lay one tortilla flat and add some beef mixture followed by cheese on one half. Fold over and repeat with remaining tortillas.
  4. Wipe the skillet clean, return to medium heat, and cook each quesadilla for about 2-3 minutes per side until golden brown and crispy.
  5. Let rest for one minute before slicing into wedges. Serve with sour cream or salsa.
