  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 2 tablespoons vegetable oil
  • 3 large carrots, sliced
  • 2 large potatoes, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Sear the beef in a large pot or Dutch oven with vegetable oil until browned on all sides. Remove and set aside.
  2. In the same pot, sauté onions until softened. Add garlic and cook until fragrant.
  3. Return beef to pot; add broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf. Bring to a boil then lower heat and simmer for 1 hour.
  4. Add carrots and potatoes; stir and cover. Cook for an additional 30-40 minutes until vegetables are tender and beef is soft.
  5. Remove bay leaf before serving; garnish with fresh parsley.
