  • 1 pound ground beef
  • 2 carrots (julienned)
  • 1 zucchini (julienned)
  • 1 cup spinach (blanched)
  • 4 shiitake mushrooms (sliced)
  • 4 eggs
  • 4 tablespoons gochujang
  • Sesame oil
  • Soy sauce
  • Salt
  • Pepper
  • Sugar
  • Sesame seeds
  • Green onions

Instructions

  1. In a skillet over medium heat, cook the ground beef with salt, pepper, soy sauce, sesame oil, and sugar until browned (5-7 minutes). Set aside.
  2. Sauté carrots and zucchini in the same skillet with sesame oil until softened (3-4 minutes), then add mushrooms and spinach for another 3 minutes. Remove from heat.
  3. In a separate non-stick skillet, fry eggs to your liking.
  4. In serving bowls, layer cooked rice topped with beef, sautéed vegetables, and a fried egg.
  5. Drizzle with gochujang and garnish with sesame seeds and green onions before serving.
