Ingredients
- 1 sheet puff pastry
- 1 egg yolk mixed with 1 tbsp milk (for brushing)
- 50 g sugar
- 20 g cornstarch
- 15 g all-purpose flour
- A pinch of salt
- 250 ml milk
- 3 egg yolks
- 1 tsp vanilla extract
- 1 tsp butter
- Fresh blueberries for topping
- Powdered sugar for dusting
Instructions
- Preheat oven to 190°C (374°F) and line a baking sheet with parchment paper.
- Cut puff pastry into rings; create smaller inner rings for half. Place smaller rings on top of larger ones and press gently.
- Brush with egg yolk mixture and bake for about 20 minutes until golden brown. Cool completely.
- For the vanilla cream: heat most milk in a saucepan. Mix remaining milk with egg yolks, sugar, cornstarch, and salt. Gradually add hot milk to egg mixture while stirring.
- Return to saucepan, cook over medium heat until thickened, then stir in vanilla extract and butter. Cool before using.
- Fill cooled pastry rings with cream, top with blueberries, and dust with powdered sugar.
