- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 medium onion, chopped
- 2 teaspoons minced garlic
- 1 cup vegetable broth
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)
- Pinch of nutmeg (optional)
Instructions
- Preheat your oven to 400°F (200°C). Toss the diced butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
- In a large skillet, heat olive oil over medium heat. Sauté the chopped onion for about 5 minutes, then add minced garlic and cook for another 30 seconds.
- Add the roasted squash to the skillet along with vegetable broth. Use an immersion blender to puree until smooth.
- Stir in heavy cream, Parmesan cheese, chopped sage, and nutmeg. Cook over low heat for about 5 minutes until heated through.
- Toss with cooked pasta or gnocchi and garnish as desired before serving.
