  • 4 cups chopped cabbage
  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 2 celery stalks, chopped
  • 6 cups vegetable or chicken broth
  • 1 (14.5 ounces) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion and minced garlic until translucent (about 3-4 minutes).
  2. Add chopped cabbage, sliced carrots, diced potatoes, and chopped celery. Cook for another 5 minutes.
  3. Pour in the broth and undrained diced tomatoes; stir in thyme and paprika. Bring to a boil.
  4. Reduce heat to low and simmer for 30-40 minutes until vegetables are tender.
