  • ¾ cup pumpkin puree
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ cup granulated sugar for rolling
  • 2 teaspoons ground cinnamon for rolling

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, beat softened butter with granulated and brown sugars until fluffy.
  3. Add egg, vanilla extract, and pumpkin puree; mix until combined.
  4. In another bowl, whisk flour, cream of tartar, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  5. Gradually combine dry ingredients into wet mixture until just mixed.
  6. Roll tablespoon-sized dough balls in a mixture of granulated sugar and ground cinnamon.
  7. Place on baking sheet spaced apart and bake for 10-12 minutes until edges are golden.
  8. Allow to cool on the sheet for 5 minutes before transferring to a wire rack.
