Description

Indulge in the authentic flavors of homemade chicken enchiladas, a comforting and satisfying dish perfect for family dinners or casual gatherings. Tender shredded chicken is enveloped in soft corn tortillas, smothered in savory enchilada sauce, and topped with melted cheese for an irresistible taste.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce (red or green)
  • 8 corn tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • ½ cup diced onion
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine shredded chicken with half of the enchilada sauce, cumin, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat and lightly fry each tortilla until soft.
  4. Spread some enchilada sauce at the bottom of a baking dish. Fill each tortilla with the chicken mixture, sprinkle with cheese, roll up tightly, and place seam side down in the dish.
  5. Pour remaining enchilada sauce over the rolled tortillas and top with additional cheese and diced onion.
  6. Cover with foil and bake for 20 minutes; then remove foil and bake for another 10 minutes until bubbly and golden.
  7. Serve hot, garnished with cilantro and accompanied by sour cream and sliced avocado.
