  • 1 teaspoon ground black pepper
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 large red bell pepper, thinly sliced
  • 2 cups cooked rice (white or brown)
  • 1 avocado, sliced
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. 1. Marinate the chicken by mixing olive oil and spices in a bowl. Coat the chicken well and let it sit for at least 30 minutes.
  2. 2. Heat a skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until fully cooked. Let it rest before slicing.
