  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 8 ounces egg noodles
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 2 cups fresh spinach (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken breasts and cook until browned on both sides (about 5 minutes). Remove and let cool.
  2. In the same pot, sauté onion, carrots, and celery for about 5 minutes until softened; add garlic and cook for another 30 seconds.
  3. Pour in chicken broth, add thyme, parsley, salt, and pepper; bring to a boil.
  4. Shred the cooled chicken using two forks.
  5. Add egg noodles and shredded chicken to boiling broth; reduce heat to a simmer and cook for 8-10 minutes until noodles are tender.
  6. If desired, stir in fresh spinach for added nutrition; cook for an additional minute until wilted.
  7. Remove bay leaf before serving; garnish with fresh parsley.
