- 6 cups chicken broth
- 8 ounces egg noodles
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf
- 2 cups fresh spinach (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add chicken breasts and cook until browned on both sides (about 5 minutes). Remove and let cool.
- In the same pot, sauté onion, carrots, and celery for about 5 minutes until softened; add garlic and cook for another 30 seconds.
- Pour in chicken broth, add thyme, parsley, salt, and pepper; bring to a boil.
- Shred the cooled chicken using two forks.
- Add egg noodles and shredded chicken to boiling broth; reduce heat to a simmer and cook for 8-10 minutes until noodles are tender.
- If desired, stir in fresh spinach for added nutrition; cook for an additional minute until wilted.
- Remove bay leaf before serving; garnish with fresh parsley.
