  • 4 bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Season chicken thighs with salt and pepper.
  2. In a large skillet over medium-high heat, add olive oil and sear chicken thighs skin-side down for about 6-7 minutes until golden brown. Flip and cook for another 5-6 minutes until cooked through. Remove from skillet.
  3. In the same skillet, reduce heat to medium and sauté chopped onion for 3-4 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
  4. Pour in heavy cream and whisk in mustards and thyme leaves. Simmer gently.
  5. Return chicken to the skillet, spooning sauce over each thigh; cover and simmer for about 15-20 minutes until internal temperature reaches 165°F (75°C).
  6. Serve hot garnished with parsley.
