Ingredients
- 1 pound boneless, skinless chicken breasts
- 1/4 cup fresh cilantro, chopped
- 1/4 cup honey
- 1/4 cup lime juice (about 2 limes)
- 1 teaspoon lime zest
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can sweet corn, drained
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- Marinate the chicken by whisking together cilantro, honey, lime juice, garlic powder, salt, and pepper in a bowl. Coat the chicken well and refrigerate for at least 30 minutes.
- Preheat your grill or stovetop grill pan over medium heat. Grill chicken for about 6-7 minutes on each side until fully cooked (165°F internal temperature). Allow to rest before slicing.
- Preheat the oven to 400°F (200°C) and roast the drained corn on a baking sheet for 10-15 minutes until lightly charred.
