  • 2 pounds beef sirloin, trimmed of fat
  • 2 teaspoons kosher salt
  • 2 teaspoons black pepper
  • 3 tablespoons unsalted butter, divided
  • 1 large yellow onion, cut in half, thinly sliced into half-moon shapes
  • 1 medium jalapeño pepper, sliced
  • 1 cup (113 g) sharp cheddar cheese, shredded
  • 1 package (12-count) Brioche slider rolls
  • 1 recipe cowboy butter, melted, divided
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Season beef sirloin with salt and pepper; let rest for 30 minutes.
  2. In a skillet, melt 2 tablespoons of butter and caramelize sliced onions over medium-low heat for 25-30 minutes.
  3. Preheat the oven to 350°F (175°C) and prepare a baking dish.
  4. Sear the seasoned steak in the skillet until cooked to desired doneness; let cool before slicing thinly against the grain.
  5. Assemble sliders in the baking dish: layer bottom halves with cowboy butter, steak slices, jalapeños, cheese, and caramelized onions; top with remaining slider halves brushed with more cowboy butter.
  6. Bake covered for 15 minutes; uncover and bake until golden brown.
