Description

  • 1 can black beans, rinsed and drained
  • 1 can black-eyed peas, rinsed and drained
  • 1 cup tomatoes, finely diced
  • 1 jalapeno, finely diced
  • 1 cup corn (fresh, canned, or thawed)
  • 1 avocado, chopped
  • 3/4 cup orange bell pepper, finely diced
  • 1/2 cup red onion, finely diced
  • 1/3 cup cilantro leaves, chopped
  • 1/3 cup olive oil
  • 1/4 cup lime juice
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the vegetables by washing and chopping them into small pieces.
  2. In a large mixing bowl, combine black beans, black-eyed peas, diced tomatoes, jalapeno, corn, avocado, bell pepper, red onion, and cilantro.
  3. In a small bowl, whisk together olive oil, lime juice, honey, chili powder, cumin, salt, and pepper until smooth.
  4. Pour the dressing over the salad base in the large bowl and toss gently to coat all ingredients.
  5. Serve immediately with tortilla chips or as a salad on its own. If preparing ahead of time, refrigerate without adding avocado until just before serving.
