- 1 avocado, chopped
- 3/4 cup orange bell pepper, finely diced
- 1/2 cup red onion, finely diced
- 1/3 cup cilantro leaves, chopped
- 1/3 cup olive oil
- 1/4 cup lime juice
- 1 tablespoon honey
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Prepare the vegetables by washing and chopping them into small pieces.
- In a large mixing bowl, combine black beans, black-eyed peas, diced tomatoes, jalapeno, corn, avocado, bell pepper, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, honey, chili powder, cumin, salt, and pepper until smooth.
