  • 4 large russet potatoes
  • 2 pounds boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 8 ounces cream cheese, softened
  • 1 cup cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • ¼ cup green onions, sliced

Instructions

  1. Preheat your oven to 400°F (200°C). Clean the potatoes and poke holes in them.
  2. Bake the potatoes for 45-60 minutes until tender.
  3. In a slow cooker, add chicken breasts and ranch seasoning. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Shred the chicken in the slow cooker and mix in cream cheese, crumbled bacon, and half of the cheddar cheese.
  5. Slice baked potatoes in half and scoop out some flesh. Stuff each half with the chicken mixture.
  6. Top with remaining cheddar cheese and bake for an additional 10-15 minutes until cheese is melted.
