  • 2 bunches asparagus (about 2 pounds), cut into 1-inch pieces
  • 4 cups low-sodium chicken broth (or vegetable broth)
  • Salt and pepper to taste
  • Fresh dill and basil (or dried equivalents)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1/2 cup Greek yogurt

Instructions

  1. In a large Dutch oven, melt the butter with olive oil over medium heat. Add onions and sauté until softened. Stir in garlic and red pepper flakes for about 30 seconds.
  2. Add asparagus, broth, salt, pepper, and dried herbs. Bring to a boil then simmer covered for 35–45 minutes until asparagus is tender.
  3. Carefully purée the soup in batches using a high-powered blender until smooth.
  4. Return the soup to low heat; stir in Parmesan until melted, then add fresh herbs, lemon juice, and Greek yogurt.
  5. Adjust seasoning if needed and serve warm garnished with parsley.
