  • 2 teaspoons minced garlic
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned (5-7 minutes). Season with salt, pepper, and Cajun seasoning. Remove from skillet.
  3. Sauté chopped onion and sliced bell pepper in the same skillet until softened (about 5 minutes). Add minced garlic and cook for another 30 seconds.
  4. Stir in chicken broth and heavy cream; bring to a simmer and reduce heat until slightly thickened (about 5 minutes).
  5. Add cooked sausage and pasta to the skillet, mixing well with the sauce. Gradually stir in shredded mozzarella cheese until melted.
  6. Serve garnished with fresh parsley.
