  • 1 pound boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1 large onion
  • 1 bell pepper
  • 2 cups fresh spinach
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup shredded mozzarella cheese
  • Pizza dough (store-bought or homemade)
  • 1 egg (for egg wash)

Instructions

  1. Season cubed chicken with salt, pepper, and paprika. Heat olive oil in a skillet over medium heat; cook chicken until browned (about 5-7 minutes). Remove from skillet.
  2. In the same skillet, sauté onion, bell pepper, and spinach until softened. Add minced garlic and oregano; cook for an additional 1-2 minutes before stirring in the cooked chicken.
  3. In a saucepan, melt butter over medium heat. Whisk in flour to form a roux for about one minute. Gradually add milk while whisking until thickened (4-6 minutes). Stir in half the mozzarella until melted.
  4. Preheat oven according to pizza dough instructions. Roll out dough; spread chicken mixture evenly on top. Pour béchamel sauce over the mixture and sprinkle remaining mozzarella.
  5. Fold edges of dough to form a crust and brush with beaten egg for shine. Bake until golden brown (12-15 minutes).
  6. Let cool slightly before slicing; garnish with parsley.
