  • 4 boneless skinless chicken breasts
  • 3 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes
  • 1/3 cup Kalamata olives (sliced)
  • 2 cups mushrooms
  • 1/2 cup heavy cream
  • 1 cup Parmesan cheese (freshly grated)
  • 2 cups fresh spinach

Instructions

  1. In a low bowl, mix all-purpose flour, paprika, thyme, oregano, salt, and pepper.
  2. Season chicken with remaining salt, pepper, oregano, thyme, and chili flakes.
  3. Dredge chicken in the flour mixture and shake off excess.
  4. Heat olive oil in a non-stick skillet over medium heat; sear chicken until golden brown (about 3-5 minutes per side). Remove and set aside.
  5. Add garlic, sun-dried tomatoes, olives, and mushrooms to the skillet; sauté for 3-5 minutes until fragrant.
  6. Stir in heavy cream, chicken stock, Parmesan cheese, spinach; simmer until slightly thickened.
  7. Return chicken to the skillet; cook until internal temperature reaches 165°F.
