  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • Olive oil, salt, and pepper

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5-7 minutes per side until golden brown. Remove from skillet.
  3. In the same skillet, sauté minced garlic for about 30 seconds. Add sun-dried tomatoes and cook for another 2-3 minutes.
  4. Stir in heavy cream and Italian seasoning; bring to a simmer. Add spinach and cook until wilted, about 2 minutes.
  5. Return the chicken to the skillet; spoon sauce over it and heat through for another 2-3 minutes.
  6. Garnish with fresh basil before serving.
