Ingredients
- 2 pounds boneless skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 1/2 pounds red potatoes, chopped
- 1 cup grated Parmesan cheese (combined)

- 1 tablespoon garlic powder
- 1 tablespoon Italian seasoning
- 1 tablespoon extra-virgin olive oil
- 3/4 cup low-sodium chicken broth
Instructions
- Chop the red potatoes and cut chicken into bite-sized pieces. Mince the garlic.
