  • 2 large eggs

  • 1 cup chopped pecans
  • For the filling: 1 cup corn syrup
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter with brown sugar and granulated sugar until smooth. Beat in the eggs one at a time and add vanilla extract.
  3. In another bowl, whisk together flour, baking soda, and salt; gradually combine with wet ingredients. Fold in chopped pecans gently.
  4. In a separate bowl, prepare the filling by whisking together corn syrup, sugar, eggs, vanilla extract, and salt.
  5. Scoop cookie dough onto a lined baking sheet and create a small well in each cookie's center; fill with pecan filling.
  6. Bake for 12-15 minutes until edges are golden brown. Let cool before serving.
