  • 50 g milk
  • 1 g salt
  • 2 g sugar
  • 60 g cake flour
  • 110 g eggs
  • 1 egg yolk
  • 15 g sugar
  • 12.5 g cornstarch
  • 125 g milk
  • 10 g unsalted butter
  • 80 g heavy cream

Instructions

  1. Preheat your oven to 190 °C (374 °F). In a saucepan, heat water, milk, butter, sugar, and salt until boiling. Remove from heat.
  2. Stir in flour until a dough forms. Return to medium heat until it pulls away from the pan.
  3. Let cool slightly before adding eggs gradually while mixing until smooth.
  4. Pipe the dough onto a lined baking sheet and dust lightly with powdered sugar.
  5. Bake for 20 minutes at 190 °C, then reduce heat to 175 °C (347 °F) for another 20 minutes until golden brown. Cool on a rack.
  6. For the custard sauce: Whisk egg yolk and sugar; add cornstarch and milk until smooth. Cook over medium heat until thickened; stir in butter.
  7. Chill custard and fold in whipped cream before piping into cooled éclairs.
