Ingredients
- 2 lb beef chuck, cut into 1.5-inch cubes
- 6 slices thick-cut bacon, diced
- 1 large yellow onion, chopped
- 2 carrots, peeled and sliced
- 4 cloves garlic, minced
- 1 lb cremini mushrooms, halved
- 12 pearl onions, peeled
- 2 cups dry red wine
- 2 cups beef stock
- 2 tbsp tomato paste
- 3 tbsp all-purpose flour
- 1 bay leaf
- 3 sprigs fresh thyme
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a Dutch oven, cook diced bacon over medium heat until crispy; remove and set aside.
- Brown seasoned beef cubes in the rendered fat; remove once browned.
- Sauté onions and carrots until soft; add garlic and tomato paste for another minute.
- Sprinkle flour over the vegetables and cook for 1–2 minutes.
- Deglaze pot with red wine, then add beef stock, bay leaf, thyme, bacon, and browned beef. Bring to a simmer.
- Cover and bake for 2.5 hours in the oven.
- Sauté mushrooms and pearl onions in butter and olive oil until golden; add to stew during the last 30 minutes of baking.
- Adjust seasoning before serving hot.
