Instructions

  1. In a bowl, whisk together the flour, baking soda, ground ginger, cinnamon, allspice, and salt.
  2. In another mixing bowl, cream the softened butter and brown sugar until light and fluffy. Then add the egg, molasses, and vanilla extract. Mix well until combined.
  3. Gradually add the dry ingredients to the wet mixture until a soft dough forms.
  4. Divide the dough in half. Flatten each half into a disk shape. Wrap each disk in plastic wrap and refrigerate for at least 1 hour to firm up.
  5. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper to prevent sticking.
  6. On a lightly floured surface, roll out one disk of chilled dough to about ¼-inch thickness. Use a ghost-shaped cookie cutter to cut out your cookies. Carefully transfer them to your prepared baking sheets.
  7. Place the baking sheets in your preheated oven. Bake for 8-10 minutes or until the edges are set while keeping the centers slightly soft.
