  • 4 heads romaine hearts, sliced lengthwise
  • 1/4 cup Parmesan cheese, grated
  • 4 slices crusty white bread
  • 1/4 cup olive oil (+ extra for croutons)
  • ½ cup mayonnaise
  • 1 tablespoon dijon mustard
  • 1 tablespoon anchovy paste
  • ¼ cup Parmesan cheese, grated
  • 1 clove garlic, minced
  • 1 teaspoon lemon zest, ½ lemon
  • 2 tablespoons fresh lemon juice, ½ lemon
  • ½ teaspoon hickory liquid smoke
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the dressing by blending mayonnaise, Dijon mustard, anchovy paste, Parmesan cheese, garlic, lemon zest, lemon juice, hickory liquid smoke, Worcestershire sauce, salt, pepper, and olive oil until smooth. Refrigerate.
  2. Preheat your grill over medium heat and lightly oil the grate.
  3. Brush romaine hearts and bread slices with olive oil.
  4. Grill romaine and bread for 2-5 minutes per side until charred and slightly wilted.
  5. Make croutons by tearing grilled bread into pieces and tossing with olive oil, salt, and pepper.
  6. Assemble the salad by placing grilled romaine on a platter topped with croutons and drizzled with dressing.
