  • 1 pound ground beef
  • 2 cups enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup diced onions
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

Instructions

  1. In a large skillet over medium heat, brown the ground beef with salt, pepper, chili powder, and cumin for about 7-10 minutes. Drain excess fat.
  2. In another skillet, warm each tortilla for about 30 seconds on each side until pliable.
  3. Preheat your oven to 375°F (190°C). Fill each tortilla with a few tablespoons of the beef mixture, some diced onions, and cheese before rolling tightly.
  4. Place the rolled tortillas seam-side down in a greased 9×13 inch baking dish. Pour enchilada sauce over the top and sprinkle with remaining cheese.
  5. Bake for 20-25 minutes until the cheese is melted and bubbly. Let cool slightly before serving.
