  • 8 ounces egg noodles
  • 1 pound ground beef
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 1 large carrot, julienned
  • 1 bell pepper, sliced
  • 2 cups bok choy or cabbage, chopped
  • ¼ cup soy sauce
  • 2 tablespoons oyster sauce

Instructions

  1. Cook the egg noodles in salted boiling water until al dente, then drain.
  2. In a skillet or wok, heat vegetable oil over medium-high heat. Add ground beef, season with salt and pepper, and cook until browned. Remove from skillet.
  3. Stir-fry onion, carrot, and bell pepper in the same skillet for about 4 minutes until softened. Add bok choy/cabbage, garlic, and ginger; cook for another 3 minutes.
  4. Combine soy sauce, oyster sauce, brown sugar, and cornstarch mixture in a bowl. Pour over vegetables in skillet and cook until thickened.
  5. Return the beef and drained noodles to the skillet; toss everything together until well combined.
