- 12 cups cubed day-old bread (French or sourdough)

- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2–3 cups low-sodium chicken or vegetable broth
- 2 large eggs, beaten
- 1/2 cup fresh parsley, chopped
Instructions
- Preheat oven to 350°F (175°C). Spread cubed bread on a baking sheet and toast for 10-15 minutes until golden. Set aside.
- In a skillet, melt butter over medium heat. Sauté onions and celery until softened (about 5 minutes). Stir in garlic, sage, thyme, salt, and pepper; cook for an additional minute.
- In a large bowl, combine toasted bread with sautéed vegetables, parsley, and enough broth to moisten (start with 2 cups). Stir in beaten eggs.
- Transfer mixture to a greased baking dish. Cover with foil and bake for 30 minutes; remove foil and bake for another 15-20 minutes until golden brown.
