  • 3/4 cup shredded pepper jack cheese
  • 8 hamburger buns
  • 1 head of roasted garlic
  • 1/3 cup mayonnaise
  • 4 garlic cloves, minced
  • 1/2 onion, finely diced
  • 2 teaspoons paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 1/2 cup chopped fresh cilantro
  • Vegetable or olive oil
  • 8 slices of cheese (optional; I use American or white cheddar)
  • 2 large avocados
  • Juice of 1 lime
  • 2 tablespoons cilantro, finely chopped
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a bowl, mix ground chicken, diced jalapeños, shredded cheese, salt, pepper, minced garlic, diced onion, and paprika until combined.
  2. Form mixture into eight patties.
  3. Preheat grill to medium-high heat and lightly oil the grates.
  4. Grill patties for about 8 minutes per side until they reach an internal temperature of 165°F. Add cheese during the last minute if desired.
