  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8-ounce) packages full-fat cream cheese
  • 1 cup full-fat sour cream
  • 1 and 1/4 cups granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons key lime zest
  • 1/2 cup key lime juice
  • 3 large eggs
  • 2 teaspoons all-purpose flour
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with aluminum foil.
  2. Combine graham cracker crumbs, sugar, melted butter, and salt in a bowl. Press into the bottom of the pan and bake for 10 minutes.
  3. Lower oven temperature to 325°F (160°C). In a mixing bowl, beat cream cheese and sour cream until smooth. Gradually mix in sugar, vanilla, lime zest, eggs, lime juice, and flour until well blended.
  4. Pour filling over cooled crust and bake for about 38-40 minutes until edges are set but center is slightly jiggly.
