  • 12 lasagna noodles
  • 15 ounces ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 2 cups marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions until al dente; drain and lay flat.
  3. In a mixing bowl, combine ricotta, spinach, mozzarella, Parmesan, egg, salt, pepper, and garlic.
  4. Spread some marinara sauce in a baking dish. Take a noodle, add filling at one end and roll tightly; place seam-side down in the dish.
  5. Repeat with remaining noodles and filling. Top rolls with marinara sauce and additional mozzarella.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until bubbly.
  7. Let cool slightly before serving; garnish with fresh basil.
