  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion
  • 2 carrots
  • 2 celery stalks
  • 3 cloves garlic
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup fresh spinach
  • Juice and zest of 1 large lemon
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken pieces seasoned with salt and pepper; cook until browned (about 5-7 minutes). Remove chicken and set aside.
  2. In the same pot, sauté diced onion, sliced carrots, and celery for about 5 minutes until softened. Stir in minced garlic for an additional 30 seconds.
  3. Return chicken to the pot; add chicken broth, thyme, and oregano. Bring to a boil then reduce heat to simmer for 15-20 minutes.
  4. Stir in spinach along with lemon juice and zest; cook for another 2-3 minutes until spinach wilts.
  5. Taste and adjust seasoning before serving hot, garnished with parsley.
